About Dates
Dates is a sweet and nourishing food from the dates palm tree, it is also known as phoenix dactylifera, “khajoor” in India, “tawarikh” in Arabic, "dabino" in Nigeria and “palmier” in French. Dates are mostly sold in dry state, the skin is strong and wrinkled when dried but smooth and drupe in fleshy state.

Ingredients (1 cup = 240ml)  1 cup dates: seedless/pitted dates  1 cup water: hot boiling  Wash dates to remove sulfites, molds, oils or stabilizers which might be used to preserve them. Soak dates in hot water for about 2 hours, then mash using a masher. Strain through a cheese cloth to extract the liquids. Put the pulp back in the soaking bowel, add more water and repeat step 2 to extract more liquids . Add the filtrate to a cooking pan and boil. Stir for about 10 minutes until it thickens to prevent burning. Remove from fire and allow to cool. Dates syrup can be stored for a few weeks in the fridge in an air tight container. The Pulp is not really a waste, use it to sweeten homemade rice pudding.
